One of my favorite side dishes to enjoy with chicken is potatoes. I almost always make mashed potatoes, but this time decided to make roasted sweet potatoes as well. It’s a good thing I did, because everyone loved them!
They are super easy to make and don’t take too long at all. You can even just eat them as a for that extra boost of energy or enjoy them with a salad.
3 sweet potatoes, washed and peeled
2 tbsp. coconut oil
Pre-heat oven to 400 F.
Cut sweet potatoes into 1/2″ circles
Toss them in oil of your choice (I use melted coconut oil). Place them onto a baking sheet in a single layer.
Bake at 400 F for 20-25 minutes depending on how soft or firm you like them to be.
