Cupcakes are a fabulous year round treat, and since it is holiday season, I decided to dress them up in red and green. These chocolate cupcakes which are filled with peanut butter icing can be decorated in so many ways by simply using a different cupcake liner, a different color of icing and sprinkles. Pastels for Easter perhaps or bright fun colors for summer!
They were pretty easy to make, especially because I used boxed chocolate cake mix and store bought chocolate icing. With so much to do this month, I wanted to keep it simple. Of course, you can use any chocolate cake/cupcake recipe that you’d like.
For the peanut butter center, I used 1 cup of peanut butter whipped together with 1 cup of powdered sugar. (Keep this in a separate bowl from the chocolate cake batter)
I started by lining 2 regular muffin tins with cupcake liners, then mixed the peanut butter filling.
Next, I made the chocolate cake batter.
I then scooped chocolate cake batter into the cupcake liners, filling them 1/3 full.
Then comes a spoonful of peanut butter icing in the middle of the first cake batter layer.
Now, top with cake batter.
Bake as you normally would according to the instructions of the cake recipe that you decide to use.
Let them cool, then decorate with icing and sprinkles or as you desire! They are also delicious just on their own.
I boxed mine up in fours to give out to friends and family. I used holiday ribbon and this printable to decorate the box.
