Sea scallops are delicious wrapped in bacon, dipped in sauce or topped with something special. They are great as appetizers, side dishes or mixed into a main dish.

I normally make bacon wrapped scallops, but I had a jar of sliced truffles that I couldn’t decide what to do with, so I took the plunge and used them to top some pan seared sea scallop appetizers.

To sear the scallops, I warmed some olive oil in a pan on medium-high heat and then seared the tops and bottoms of the scallops for 3-4 minutes each. The length of searing time depends on how thick the scallop is. The main thing is to sear each side until it can easily be removed from the pan.

I placed the scallops onto each appetizer plate and sprinkled them lightly with salt and pepper and drizzled with truffle oil.

I then lightly cooked the truffle slices in the pan to bring out their flavor and put them atop each scallop.

They were delicious and most of the family liked them. Apparently some of my family members are not mushroom fans! Lol.

  • I have never tried cooking scallops. I think I got scared off from watching them get messed up so many times on those cooking shows on TV lol! I just hosed these to my husband though and he is insisting I try them! Yours looks beautiful and you make it sound easy so I am excited to give it a try!
