I love quick and easy snacks and meals, especially ones that can be made ahead of time. I had made Chocolate Muffins with “secret ingredients” in them such as vegetables for my daughter to bring to school as part of her lunch. However, I wanted to mix it up and this time decided to make cheese and bacon muffins to pack as part of her lunch.

They turned out really well and were quite simple to make.

I simply started by pre-heating the oven to 350 F.

Then I mixed together the following (using a spatula):

2 1/2 cups of flour

1 tsp. baking powder

6 slices of cooked & chopped bacon

1 cup of shredded cheese (any kind you prefer) in a mixing bowl.

Next, I added:

1 1/2 cups of milk

and 2 eggs

Mix well, and pour into a lined muffin tin. Bake for about 25 minutes.

I ended up with a dozen muffins which was perfect. We ate half of them and freezed the other half.

I would definitely double the recipe if we were having guests over or if I wanted to share some with my neighbors!
