Breakfast bake also known as a Breakfast Strata

I find that my weekdays are pretty busy, but the weekends seem even busier! However, I try to make simple yet nutritious meals for my family.  This past weekend I was having my family over for brunch, so I decided to make a breakfast strata.  I could have made waffles, pancakes, omelettes, French toast, you name it, but I chose the strata because I could prep it as early as the night before, pop it in the oven, and be able to sit and spend time with my family. If you would like a simple, yet delicious breakfast, then this recipe is for you!

Here’s what you will need:

Rectangular baking dish
Bread (your choice of multigrain, white, brown, leftover buns) – slices or cubed, depends on your bread choice
Eggs – 10
Milk – 1 cup
Cheese – shredded
Ham – cubed

Your choice of vegetables:
Tomato – cubed
Green Pepper – diced
Sweet bell pepper (I chose orange) – diced
Onion – diced
Green onion – chopped
Mushrooms – diced
Spinach – chopped

After you have prepped all of your veggies, preheat the oven to 425F.

Place the bread at the bottom of the baking dish. Place an even layer of each of the vegetables (much like you would when making a pizza – if you have extra veggies you can use them to make your own pizza!). Then sprinkle ham and cheese all over.  Beat the eggs, mix in the milk, and use salt and pepper to season. Then pour egg mixture evenly over the layers in the baking dish.

Bake in the oven for approximately 35 minutes.
