I was browsing the grocery store for oranges one day when I saw that they had Meyer Lemons for sale. It was much to my surprise as I had never seen them at my usual grocery store before. I debated whether or not to get them, but just couldn’t resist. There are so many things that you can make with them, but I decided to make a Meyer lemon chiffon pie since we love lemon pies of any sort.

First, gather the ingredients:

1/2 cup sugar

1 tbsp. cornstarch

Meyer lemon rind, grated (I love lemon rind so I grated as much as I could get from the lemons)

Juice from 2 1/2 Meyer lemons

3 eggs

1/3 cup cold unsalted butter

1/2 cup heavy whipping cream

1 baked 9″ pie shell, cooled (I kept it simple and baked a store bought pie shell)

In a saucepan, whisk together sugar, cornstarch and lemon rind.

Then add the lemon juice and eggs.

Cook on medium heat while whisking until thick or bubbly.

Once it has thickened up, remove from heat. Whisk in butter, one tablespoon at a time.

Transfer to a bowl and put plastic wrap on the surface of the filling to prevent it from drying out.

Allow it to cool to room temperature. It took about an hour.

Next, whip the whipping cream, then add the cooled filling to it.

Gently whisk them together.

Pour the filling into the cooled pie shell and refrigerate for at least 2-3 hours.

*I covered the pie with plastic wrap, then put it in the fridge to cool.  I added fresh whipped cream before serving. It was pretty easy to make and tasted amazing!
