Anything rainbow themed is sure to be fun because of all the bright colors involved. I made these rainbow cookies using a sugar cookie recipe and simple circle shaped cookie cutters. You can also use a plastic cup to cut out the circles. After cutting out the circle, cut it in half to get the shape of a rainbow.
Mix up a batch of Royal Icing and pipe it onto the cooled cookies starting with red, then orange, yellow, green, blue and violet.
Allow the cookies to dry overnight and serve or package them as desired!
