Rarely do I eat eggplant let alone purchase it. Since I have been receiving a basket of organic vegetables every week, there have been vegetables in it such as egg plant. Now, I had to think of what to do with the eggplant. Do you peel eggplant? How do you cook eggplant? What are some good eggplant recipes? I turned to my sister for some answers. No,you don’t have to peel it , but you should wash it. There are many ways to cook eggplant, but my sister suggested eggplant parmesan.

Since I’ve made chicken parmesan, I just used that recipe and substituted the chicken with eggplant. The only major difference was the preparation of the eggplant.

It turned out really well, and even my kids ate it! I’ve included the recipe below. If you have ideas on what to make with eggplant, please leave a comment so I can try that next time!

Eggplant Parmesan Recipe:

1 large eggplant

1 jar marinara sauce (my sister gave me a jar she had canned herself)

2 cups bread crumbs

2 eggs

Olive oil

Mozzarella cheese

Parmesan cheese

Salt and Pepper to taste

1. Slice the eggplant in 1/4 inch slices, after cutting off both ends. Place slices on a cookie sheet lined with paper towel. Shake a little salt on each slice, rub to lightly coat. Place another paper towel over the slices. Put another cookie sheet on top and place something heavy on it. Leave for 20 minutes to 2 hours. (this causes the liquid to come out.)

2. After time has elapsed, place 2 eggs in a bowl and whisk. Place breadcrumbs on a plate or in a bowl. Dip each eggplant slice into the egg, then coat with breadcrumbs.

3. Fry each eggplant slice in the olive oil until golden brown on each side. (You can use a deep fryer if you have one.). After frying, place each slice on paper towel to help absorb excess oil.

4. Put a thin layer of marinara sauce on the bottom of a 9×13 baking dish. Place slices of eggplant in single layer on top of sauce. Top with marinara sauce, and mozzarella cheese. Repeat layers, finishing with marinara sauce on top. Then put Parmesan cheese to cover.

5. Bake at 350F until all cheese has melted, approximately 15 minutes.
