I made these cute mermaid cookies for my daughter’s birthday party along with rainbow cookies and all the little girls loved them! To make them, you just need your favorite sugar cookie recipe (I use this one) and royal icing. You can find my tutorial on how to make royal icing HERE.

I used the girl cookie cutter by Wilton and just trimmed off part of the dress so that the cookie would be more mermaid shaped. I would have gotten a much cuter mermaid shape if I had an actual mermaid cookie cutter, but luckily the kids who were eating the cookies didn’t really pay too much attention to the shape.

I made the icing, seperated it into different bowls and then colored it different colors……ivory, turquoise, green, purple, yellow, brown etc. You can use any colors you like of course. I definitely had to have the ivory for the faces and then brown and/or yellow for the hair. Red hair would have been fun too! I put the icing into icing bags fitted with #2 tips and decorated the cookies once they cooled off.

The first thing I piped onto the cooled cookies was the circles for the faces using the color ivory. I let it dry for about an hour before piping on the hair and the mermaid outfits so that it wouldn’t all run together. I had to let the icing dry completely (overnight) before drawing the faces on with edible ink markers. As you can see from the mermaids in the middle, I got a bit impatient and started drawing a bit too soon. You can use icing for the eyes, nose and mouth instead of edible ink markers, but I find it to be too time consuming to pipe every detail.

    I love mermaids. If I could be a mermaid, I totally would. I used to pretend I was a mermaid in my swimming pool when I was little.
