Something I have become very accustomed to is baking sugar cookies from scratch. I used to find any excuse to make them, whether it was a birthday party, a holiday or just because someone asked me to. I got to make these for my daughter’s Rainbow Mermaid themed birthday party along with other cookies that I will be posting soon.
I made some simple round sugar cookies and piped swirls of royal icing on them. Some of them I sprinkled with matching sanding sugar.
For the Rainbow Fish cookies, I covered them in white icing and added the eye and colorful icing immediately. To get the colorful swirl effect, I quickly added vertical lines in each of the rainbow colors to the wet white icing and then dragged the tip of a toothpick tip through them to create the blended swirls. It’s one of my favorite ways to decorate cookies, because it is so simple, yet creates such a stunning effect. I then let the icing dry overnight.
