Decorating cookies with icing is always a lot of fun, and for me, giving them away is even more fun! I was making up a batch of royal icing to decorate rainbow themed cookies so I thought I would snap a few pictures and share how to make the icing.

In a mixing bowl, add 4 cups icing sugar, 1/4 cup meringue powder and 1/2 cup of water

Mix on low for about a minute, then stop to scrape icing sugar down from the sides of the bowl











Now, how do you make icing for cookies? It’s not too complicated and this icing recipe only calls for 3 ingredients:
Meringue Powder
Icing Sugar
and Water

Next, continue to mix on low speed for a full 10 minutes. This is the icing after about 5 minutes.

This is the finished icing after 10 minutes. Notice how it’s a bit thicker looking?











I then split the icing into six separate bowls and colored them with Food Coloring Gel. I put mine in Piping Bags with number 2 tips attached and usually put a toothpick into the tips to keep my icing from drying out. Be sure to work quickly and have your bags ready to go so that your icing doesn’t dry out! I closed the tops (open ends) of the bags using twist ties, but you can easily use rubber bands.

    In almost 60 years of cooking, I have never mastered Royal Icing. I will try this on my Easter cookies. I am a new follower. Patsy

      Yes, I believe icing sugar and powdered sugar are the same thing. 🙂
