I love making gingerbread cookies during the summer season, because they are such a fun treat. I made these miniature tea pot cookies to enjoy with some green tea. I kept the teapot cookies plain and simple, but added royal icing to the flower shaped cookies for those who enjoy the sweetness of iced cookies. The cookies turned out to be soft gingerbread because I rolled out the gingerbread cookie dough a bit thicker than usual.

For the gingerbread cookie recipe, I used this Gingerbread Snowflakes recipe from the Martha Stewart website. There is also a link there for the royal icing recipe I used. That particular royal icing recipe is my go to recipe whenever I make any type of decorated cookie, whether it is a sugar cookie, gingerbread cookie or shortbread cookies.
